4 Sea Bass from one of the Blue Island Fish Markets

4 tablespoons dry white wine

2 tablespoons lemon juice

4 strips of lemon peel (only the yellow part)

4 small sprigs fresh thyme

2 tablespoons olive oil

Salt

Pepper

For the oil and lemon sauce:
-
4 tablespoons olive oil
-
2 tablespoons lemon juice
-
1 tablespoon parsley, very finely chopped
Instructions
Purchase the cleaned Sea Bass from one of the Blue Island Fish Markets.
Rinse and drain the fish and with a sharp knife score them on both sides with 2-3 vertical cuts.
Put a strip of lemon peel and a sprig of thyme on the belly of the fish. Next, put the fish bass in a basin, sprinkle with lemon and wine, season with salt and pepper, turning it over to make sure it is well covered. Leave to marinate for 20-30 minutes.
Preheat the grill in the oven.
Cover a shallow baking pan (or oven pan) with aluminium foil (shiny side down) and lay the fish out in it. Bake in the middle of the oven for 10-15 minutes until golden brown, turn the fish over and continue baking for another 5-10 minutes.
Prepare the oil and lemon sauce while waiting for the fish to cook.
Beat the oil and lemon together in a bowl and then stir in the parsley.
Remove the pan from the oven, pour the olive and lemon sauce over it and serve.
Ideal when accompanied by baked or grilled vegetables and salad.
