3-4 fish fillets from one of the Blue Island Fish Markets (Grouper, Snapper or whichever is preferred), cooked
1 kg potatoes, peeled and boiled
1 kg courgettes, boiled and sliced in rings
2 onions, sliced
2-3 ‏spring onions, finely chopped
1/2 bunch of dill, finely chopped
1/2 bunch of parsley, finely chopped
1 Florina pepper, raw, diced
1 cup olive oil
1 cup lemon juice
Freshly ground pepper

Purchase the fish fillets from one of the Blue Island Fish Markets.

Wash the fish and dry with kitchen paper.

Cook the fish on the grill, let it cool completely, peel it and then break it by hand into medium size pieces.

Add all the ingredients, except the olive oil, lemon juice and salt and pepper, in a salad bowl and stir well.

Cover the salad bowl with plastic cling film and refrigerate for 1 hour.

Then, mix the olive oil and lemon juice well in a shaker. Remove the salad from the refrigerator, season with salt and stir again. Drizzle with the oil and lemon sauce and sprinkle with freshly ground pepper.
