Ingredients

20 small prawns, cleaned and without the shells, from one of the Blue Island Fish Markets

150 g rice

250 g mixed spinach and rocket

Juice and zest of a lemon

Juice and zest of ½ orange

3 tablespoons olive oil

Salt

Pepper
Instructions
Half-fill a saucepan with water, add a level tablespoon of salt and put on a high heat. Once the water starts to boil, add the rice and boil 10 minutes.
Put the olive oil in a frying pan and when it is hot, add the prawns and sauté for 2 minutes. Add the orange juice and lemon juice and then the orange zest. Keep the prawns warm.
Mix the rice with the prawns in a large bowl and then season with salt and pepper.
Stir gently and just before serving, add the rocket and spinach.
