8 Sea Bass fillets from one of the Blue Island Fish Markets

300gr. spinach leaves

2 cloves garlic, finely chopped

100gr. Edam cheese

2 tablespoons sour cream

2 κ.σ. eggs

Salt
-
Pepper
-
2 pinches nutmeg

200gr. unsalted butter, cut into small cubes

Zest of half an orange
Instructions
Purchase the filleted Sea Bass from one of the Blue Island Fish Markets.
Wash and clean the spinach. Next put it into boiling, salted water. Drain well, cut it up and place in a basin. Add the garlic, orange zest, sour cream, grated cheese, nutmeg, salt and pepper.
Then dry the fillets with kitchen paper and lay them on a buttered oven tray or baking dish. Cover the fillets with the spinach mixture and make them into little rolls.
Put a little sour cream and a cube of butter onto each roll.
Bake at 180o C for about thirty minutes.
