Ingredients

4 Sea Bass fillets (without the skin)

1 tablespoon olive oil

1 cup breadcrumbs

2 tablespoons parsley, finely chopped

1/2 cup pistachio nuts

1 teaspoons Salt

Ground black pepper

1 glass Basmati rice

1 1/2 glass water

1 carrot, diced

Instructions
Rinse the rice twice in a colander. Then, put it in a pan along with the water, carrot, salt and pepper. Simmer until cooked. Using a blender, mix the breadcrumbs, parsley, pistachios, salt and pepper. Blend until you have a green mixture.
Put a little olive oil in a non-stick baking tray. Put the fish in with the skin side down and drizzle with olive oil. Cover them with the pistachio mixture and bake in a preheated oven at 180°C for 7 to 9 minutes.
Serve with the rice.
