1 kg Sardines from one of the Blue Island Fish Markets

2 cloves garlic, finely chopped

1 1/2 tablespoons hot mustard

2 tablespoons lemon juice

2 teaspoons crushed fenugreek

2 teaspoons ground oregano

1/2 teaspoon ground dry rosemary

1 teaspoon sweet paprika

1 teaspoon hot paprika

2 teaspoons onion powder

Olive oil
-
Salt

• Freshly ground pepper
Instructions
Purchase the cleaned Sardines from one of the Blue Island Fish Markets.
Wash and drain the sardines. Season with salt and pepper.
Preheat the oven to 220°C. (Fan oven).
In a deep bowl, mix the olive oil together with all the ingredients for the crust. Add the sardines and mix them by hand, so that they are well covered in the mixture.
With the remaining olive oil, grease a baking pan that the sardines fit into in one layer. Spread out the sardines and bake for about 15 minutes, until they are done and a crispy crust forms on top.
