Ingredients for the Mussels:

1 kg fresh black Mussels

2 tbsp Olive Oil

2 Spring Onions, finely chopped

1 clove of Garlic, chopped

2 Tomatoes cut into cubes

1/2 cup of White Dry Wine

10-12 leaves of fresh Basil
-
Salt
-
Ground Black Pepper

Ingredients for the Toasts:
-
10 slices of Bread
-
2 tbsp Olive oil
-
1 tbsp dried Oregano
-
1/2 tsp sweet Paprika

Coarse Salt
Instructions
Arrange the slices of bread on a baking tray and sprinkle with olive oil. Add the oregano, paprika and salt. Place in a preheated oven at 180 °C for 10 – 12 minutes.
Next, pour the olive oil into a deep-frying pan and sauté the onion and garlic until soft. Add the mussels, mix and add the wine. Cover with a lid and leave for 2-3 minutes until the mussels open up and cook (discard any that remain closed). Finally, add the tomatoes, salt, pepper and basil leaves, mix and serve with the toasted slices of bread.
