Ingredients

3kg. various fish for boiling from one of the Blue Island Fish Markets

1 cup olive oil

3 coloured peppers

1 large tomato, peeled and cut into four

1 bunch celery, uncut

1kg. kg potatoes, cut into large pieces (or whole if small potatoes)

3 whole carrots

2 large onions, cut into four

1-1 1/2lt. water (depending on the consistency required)

Salt

Instructions
Purchase the fish cleaned from one of the Blue Island Fish Markets.
Heat the olive oil in a deep pan and then sauté the vegetables on a high heat for 1-2 minutes. Putthe fish on top and add the water. Season with salt and pepper and boil on a high heat.
As soon as the potato has softened, take the soup off the heat. Using a slotted spoon, put the fish and vegetables on a platter. Pass the soup through a fine sieve, then mash them along with 2-3 potatoes. Use a blender, if preferred. A piece of cheesecloth in the sieve will make sure absolutely no small pieces of fish bone are in the soup.
Season to taste with salt and pepper (and lemon, if desired).
