Ingredients

800 g mussels, cleaned, from one of the Blue Island Fish Markets

50 g olive oil

1 small onion, finely chopped

1 teaspoon teaspoon crushed garlic

A few leaves of fresh thyme

250 g dry white wine

For serving:

Lemon juice
-
Finely chopped parsley
Instructions
Heat the olive oil in a large, shallow pan on a medium to high heat. Then add the onion and garlic and leave to cook for 1-2 minutes. Next, add the thyme and white wine. Allow the mixture to simmer. Then add the mussels and cover the pan. After three minutes, lightly shake the pan to gently stir the mussels. Cook for another 3 minutes and take the mussels off the heat. Throw away any mussels that haven’t opened.
Serve on a platter along with the mussels mixture. Add lemon juice and parsley.
Accompany with a French baguette.
