Ingredients

1 kg fresh mussels

2 tablespoons olive oil

3 cloves of garlic, chopped

2 spring onions, finely chopped

1/2 glass of dry white wine

1 glass of fresh cream

1/2 teaspoon salt

1/3 teaspoon ground black pepper

1/2 teaspoon dill, finely chopped

6 basil leaves, finely chopped
Instructions
Purchase the mussels from one of the Blue Island Fish Markets
Put the olive oil in a deep saucepan and fry the spring onion and the garlic until they are soft. Then put the mussels in the pan and stir two or three times. Add the wine and cover the pan. Leave for 4 minutes until the mussels open and are cooked. Uncover the pan and throw away any mussels that are still closed. Leave the saucepan on a high heat until the alcohol evaporates from the wine and has reduced until about half the amount of liquid is left in the pan.
Add the fresh cream and season to taste with salt and pepper. Cook for another 4 to 5 minutes to thicken the sauce. Towards the end of the time, add the fresh herbs.
Serve.
