Ingredients

Quantity:
1 kg Black Mussels with shells from one of the Blue Island Fish Markets
1 onion, chopped in a blender
1 chilli pepper
5 tablespoons olive oil
1 litre aromatic white wine
1 tablespoon coriander seeds, crushed
Saffron
Salt
Freshly ground pepper
Parsley

Clean (any possible hairs) and wash the mussels well.

Put the olive oil, onion and finely chopped chilli pepper in a deep pan, preferably a cast iron one. Sauté lightly and add the mussels.

Stir two or three times with the oil and cover the pan. Leave them for 2 – 3 minutes, open the pan and throw away any mussels that are still closed.

Then add the aromatic wine, coriander seeds and saffron. Bring the wine to the boil with the pan uncovered, add a little salt and boil for about 5 minutes.

Serve the mussels in the sauce, after sprinkling them with plenty of freshly ground pepper.

Garnish with parsley.
