Ingredients

2 Monkfish fillets

10 slices Prosciutto

1 tablespoon olive oil

Zest and juice of an orange

Salt

Pepper
Instructions
Place the fish fillets in a baking dish and marinate them with olive oil, orange zest, orange juice, salt and pepper. Refrigerate for 30 to 45 minutes.
Divide the prosciutto slices into two lots of five and line them up, one slice touching the other. Put the fish fillets on the sides of the prosciutto and wrap them up making a roll.
Place the monkfish rolls on a non-stick baking tray and bake them in a preheated oven at 180°C for 20 minutes.
Serve with mashed vegetables.
