500gr. cleaned Anchovies from one of the Blue Island Fish Markets

Olive oil for frying

For the crust:

200gr. cornflakes
-
100gr. sesame seeds

100gr. breadcrumbs

100gr. flour

2 Eggs
Instructions
Ask at one of the Blue Island Fish Markets for the fish to be cleaned (scales, head and entrails)
Open the anchovies in the middle and remove the central bone, without cutting the side of the back. Fold the two sides together again, giving the anchovy its original shape. Season with salt and pepper and put to one side.
Using a blender, blend the cornflakes, sesame seeds and breadcrumbs to a powder, then transfer to a bowl.
In another bowl, beat the eggs with a tablespoon of water until frothy. Put the flour in a third bowl. Coat each anchovy with flour, turning it to make sure it is well covered, then dip in the egg and finally dip in the bowl with the sesame mixture.
Put olive oil in a large frying pan to about ¼ full and place on a high heat. Fry the anchovies for about 2 minutes on each side, until crisp and golden. Remove them from the frying pan using a slotted spoon and let any excess oil drain onto absorbent paper.
Serve the anchovies with chips (French fries) and, if desired, with homemade mayonnaise with lemon zest.
