Ingredients

2 Salmon fillets (250 g each)

1/2 cup olive oil

3 tablespoons lemon juice

1 tablespoon sweet paprika

200 g sesame seeds

For the purée

600 g peas

2 tablespoons butter

1 cup milk

1 cup water

2 tablespoons basil leaves, finely chopped

Instructions
Marinate the salmon fillets in a baking dish with olive oil, lemon juice, paprika, salt and pepper. Put the fillets in the refrigerator for 1 hour.
At the same time put water, milk, peas, salt and pepper in a saucepan. Cook for 10 minutes over a medium to high heat. When the 10 minutes have passed, remove from the heat and add the basil, use a hand blender to blend the ingredients until they become purée. Pass through a sieve to remove any lumps or small pieces and add the butter and stir, seasoning to taste with salt, if necessary.
Place the sesame seeds on a plate and place the salmon fillets to cover one side with sesame seeds. Transfer the fillets to a lightly greased baking dish with the sesame layer on top and bake in the oven until a nice golden crust is formed.
Serve with a few spoonfuls of the pea purée next to the salmon.
