Ingredients

Quantity:
1 kg Prawns from one of the Blue Island Fish Markets
4 spring onions
1 egg
A little parsley
1 shot Ouzo
1/2 glass beer
1 cup flour
1 tablespoon sesame seeds
2 tablespoons grated Kefalotyri cheese
Oil for frying
Salt
Pepper

Purchase the cleaned Prawns from one of the Blue Island Fish Markets.

Put the prawns in a bowl along with the Ouzo and let them marinate for half an hour.

In a second bowl, add the flour, the gently beaten egg, the sesame seeds and Kefalotyri cheese. Season with salt and pepper and add the chopped parsley and the chopped spring onions. Add the beer and stir well. When the mixture is a medium thickness, add the marinated shrimp.

Allow to stand for 30 – 60 minutes in the refrigerator for all the flavours to blend and then take tablespoons of the mixture and drop into a frying pan with hot oil.

Let them brown.
