Ingredients

Quantity:
1 large octopus (about 1.5 to 2 kg) from one of the Blue Island Fish Markets
1 glass olive oil
1 glass dry red wine
3 onions cut into thick slices or 2 kg small spring onions
4-5 bay leaves
5-6 cloves
1 cinnamon stick
Juice of 1 orange
2 slices of orange peel
1 tablespoon chopped parsley
Salt
Pepper

Purchase the octopus, cut into small pieces, from one of the Blue Island Fish Markets.

Wash and drain the octopus. Put the octopus in a deep saucepan and leave it until it absorbs its liquids. Then add the olive oil and onion and leave to fry gently for 5 minutes. Douse with the red wine and add the orange peel, the bay leaves, cinnamon and cloves. Then season with salt and pepper, and add the orange juice.

Simmer over low heat for about 1 hour (adding a little water if necessary).

Serve with lemon slices and chopped parsley.
