12 medium size Prawns from one of the Blue Island Fish Markets

1 French baguette

150 g cream cheese

1/2 teaspoon saffron (optional)

1 orange, sliced

2 tablespoons olive oil

Salt

60-80 g Butter

250 g Mozzarella cheese, sliced

2 spring onions, finely chopped

Balsamic cream for serving
Instructions
Purchase the cleaned Prawns from one of the Blue Island Fish Markets. Leave the tails on for nice appearance.
Drizzle the prawns with olive oil, salt and pepper.
Cut the baguette in half. Cut the 2 halves horizontally, creating 4 bruschetta.
Mix the cream cheese, saffron in a bowl and put to one aside.
Cut the orange into slices.
Then put a frying pan over a high heat and once hot, sauté the prawns until golden brown on both sides (for about 30 seconds each side).
Remove the prawns from the frying pan, place them on a plate, on a paper towel and put to one side.
In another frying pan over medium heat, melt the butter and fry the bread until it goes a golden brown colour.Place the baguettes on a platter. Then brush with the cheese mixture. Place on each slice: slices of mozzarella, 3 shrimps, orange slices and chopped spring onion.Serve the bruschetta with balsamic cream.
