Ingredients

1 kg Squid rings from one of the Blue Island Fish Markets

1 cup village flour or corn flour or a mixture of both

1 teaspoon Salt

1 teaspoon dried oregano

Oil for frying

Juice of 1 lemon

Fresh herbs for serving
Instructions
Heat the oil in a large deep frying pan over a high heat. Mix the flour, oregano, and salt in a bowl. After letting the squid drain well, coat them in the flour mixture. Use either a plastic container with a lid or a plastic food bag to coat them. Shake the squid in a colander to remove any excess flour and to separate the squid rings from each other.
Fry the squid in plenty of hot oil taking care not to let them stick together. The oil should completely cover the squid. When they are golden – brown, turn them over once or twice using a slotted spoon, to let them cook thoroughly. The cooking time should not be more than 3 minutes.
Serve on a platter covered with kitchen paper to absorb excess oil. Finally, sprinkle with lemon and with the fresh herbs.
