24 large Prawns from one of the Blue Island Fish Markets

1 clove garlic, crushed

2 teaspoon smoked paprika

1 tablespoon thyme leaves, finely chopped (or 1 teaspoon dry)

1 tablespoon oregano leaves, finely chopped (or 1 teaspoon dry)

1/2 - 1 level teaspoon freshly ground black pepper to taste

1 level teaspoon Cayenne pepper (or other hot red pepper) to taste

40 ml olive oil

Instructions
Ask at the Blue Island Fish Market for the prawns to be cleaned of shells and gut, with the heads and tails intact.
In a bowl, mix the garlic, paprika, thyme, oregano, peppers, 30 ml of olive oil and salt.
Brush the prawns with the mixture. Put a non-stick frying pan to heat well and cook the prawns, in batches, for about 1 – 1½ minutes on each side (depending on their size), until golden brown. If they don’t all fit, cook them in two lots.
Serve with pilau rice with pine nuts, raisins and yogurt.
Tip: Be careful not to overcook them because they will get rubbery.
