1 kg Striped Red Mullet from one of the Blue Island Fish Markets

500 g tomatoes

1/2 cup white wine

3-4 cloves garlic, finely chopped

5-6 sprigs of rosemary

1 cup olive oil

3/4 cup bread crumbs

Instructions
Purchase the cleaned Red Mullet from one of the Blue Island Fish Markets.
Wash the fish, leave to drain over a colander for about 20 minutes, then season with salt and pepper.
Put the fish on an oiled baking pan.
Peel the tomatoes, remove the seeds, then grate them.
Next, mix the tomatoes, olive oil, wine, garlic and rosemary in a bowl. Drizzle the fish with a little sauce and then cover with bread crumbs. Finally, pour in the rest of the sauce and cover the baking pan with aluminium foil.
Bake in a pre-heated oven at 180°C for about 40 minutes. Every now and then, spoon some of the sauce onto the fish, so they don’t get dry. If necessary, add a little extra water or wine.
