200 γρ. Baby Squid, cleaned and cut into pieces from one of the Blue Island Fish Markets

100 γρ. spinach leaves

10 fresh mint leaves

1 teaspoon lemon zest

2 tablespoons orange–lemon cream

150 γρ. fine bulgur wheat (especially for salads)

300ml water

2 tablespoons olive oil

1 cup mixed red and yellow peppers, cut into thin strips

Instructions
Ask at the Blue Island Fish Market to clean and cut up the squid.
Heat the olive oil in a deep saucepan and sauté the onion for a while until soft. Add the peppers, couscous and water. Add the lemon zest, orange-lemon cream, salt and pepper. Stir for about a minute until it boils. Finally, add the spinach and baby squid. Cover the pan and cook over a low heat for 5-6 minutes.
Serve the squid with couscous and garnish with the mint leaves.
