Ingredients

500 g cleaned Prawns from one of the Blue Island Fish Markets

500 g fusilli pasta

1 pack ready-made tomato sauce

Fresh basil

4-5 cloves garlic

Salt

Pepper

A little Ouzo

Zest and juice of half a lemon or lime

Instructions
Put the prawns in a bowl and sprinkle with olive oil, salt and pepper. Stir gently and sauté in a hot nonstick frying pan for 2 minutes, until golden. At the same time, mix the garlic with 3-4 tablespoons of olive oil in a blender until it becomes a pulp, add it to the frying pan and sauté for another 2 minutes.
When sautéed, pour in half a glass of ouzo and light it with a match if you feel comfortable with that (and having taken all the necessary precautions) or otherwise let it evaporate completely.
At the same time, boil the pasta in salted water, according to the manufacturer’s instructions minus 2 minutes. Drain and put to one side, saving some of the pasta water to use in the sauce later.
Add the sauce to the pan with the prawns and stir well, waiting for it to warm up for 1-2 minutes. Add the pasta, stir well and if necessary add some of the saved water. Remove the pan from the heat and add the lemon zest and juice and plenty of chopped basil.
