1.100 - 1.200 g cleaned Grouper from one of the Blue Island Fish Markets

3-4 tomatoes, finely chopped

2 onions, finely chopped

Olive oil

1 glass dry white wine

Salted butter, cubed

Pepper

1 cinnamon stick

A few cloves

Heat the olive oil and sauté the onions in a deep frying pan. Once they have softened, add the tomato, salt, pepper, cinnamon, cloves and the wine. Let the sauce thicken.
Preheat the oven to 200°C.
Then put the fish in a baking tray lined with baking paper, then drizzle with the sauce and bake in a medium oven for 30 to 40 minutes.
