Ingredients

1 kg Striped Red Mullet from one of the Blue Island Fish Markets

3-4 sprigs of parsley (stems whole, leaves finely chopped)

Juice of a lemon

2-3 tablespoons olive oil

1 small clove garlic

3 tablespoons water

Salt

White pepper
Instructions
Purchase the cleaned fish from one of the Blue Island Fish Markets.
Wash the fish, let them drain in a colander for about 20 minutes and season with salt and pepper. Put the water, garlic and parsley stalks in a saucepan and lay the fish inside in a circle. Put the pan on a medium heat. Cover and cook for 10 minutes.
Add 1 – 2 tablespoons of water during cooking, if necessary, so that the fish don’t stick to the pan. At the end, pour in the lemon juice.
Remove the fish from the pan carefully, drizzle with the oil, sprinkle with the parsley leaves and serve.
