Ingredients

16 large Prawns from one of the Blue Island Fish Markets
2-3 tablespoons olive oil
1 onion, very finely chopped
1 level tablespoon flour
1/3 cup Ouzo
2 cups cream
1 κουταλιά tablespoon dill, finely chopped
Salt
Pepper

Ask at the Blue Island Fish Market to clean the prawns.

Heat the oil in a large frying pan and sauté the onion over low heat the onion until it softens. Add the prawns and stir until they start to change colour, turn pink, and start to curl up. Sprinkle with flour and mix until absorbed.

In the meantime, heat the ouzo in a saucepan and then light it (flambé). Add the prawns carefully, let the flames settle and then add the cream. When it boils, lower the heat, let it boil for 1-2 minutes, season with salt and pepper and remove the pan from the heat.

Garnish with chopped dill. Serve immediately with rice or pasta.
