Ingredients

1 kg fresh cleaned Tuna from one of the Blue Island Fish Markets

5-6 ripe tomatoes, peeled

1 onion, finely chopped

2 cloves garlic, finely chopped

80 ml dry white wine

40 ml lemon juice

Olive oil for frying

Dill, finely chopped

Parsley, finely chopped

Cumin (optional, but no more than ½ a teaspoon)

Crushed chilli pepper flakes

Unsalted butter
-
Freshly ground pepper

Instructions
Purchase the Tuna, cut into slices, from one of the Blue Island Fish Markets.
Sauté the tuna lightly on both sides; taking care not to overcook it. Put it to one side, covered, to keep warm.
Then in the same frying pan sauté the onion and garlic for a while, until they turn white. Add the wine and lemon juice and allow the liquid to evaporate. Add the tomatoes after the seeds have been removed and cut into small pieces. Let the sauce boil on a very high heat for one minute. Add as much butter as necessary and stir until it thickens. Finally, add some chili pepper flakes and cumin and finish off with dill and parsley. Season to taste with salt and pepper.
Serve the tuna fillets drizzled with the sauce.
Ideal accompanied by a green salad and jacket potato.
