Ingredients

Quantity:
1 kg Mussels from one of the Blue Island Fish Markets
40 ml olive oil
2 cloves garlic, finely chopped
1 spring onion, finely chopped
100 ml white wine
1 large tomato, finely chopped
100 ml Sambuca
50 g fresh basil, finely chopped

Put the olive oil and mussels in a hot frying pan.

Cook for 3 minutes and then add the onion and garlic

Flambé with the Sambuca and douse with the white wine.

Finally, add the tomato and basil.
