Ingredients

1kg Cod from one of the Blue Island Fish Markets

1 1/2kg seasonal wild greens

1 leek in slices (rings)

400gr. tomato, grated

Cherry tomatoes, cut in half

Juice of a lemon
-
6 spring onions, finely chopped

3 cloves garlic, sliced

Rosemary
-
Olive oil
-
Salt

Pepper
Instructions
Wash the cod and leave to drain. Season with salt and pepper, then sprinkle with the lemon juice.
Gently boil the greens in salted water. Drain and then mix them with the spring onions, leek and the garlic.
Next, coat an oven tray with a little olive oil and spread the greens and the cod onto it. The grated tomato and the cherry tomatoes go on top. Then sprinkle with olive oil and put some sprigs of fresh rosemary on top too.
Cook in a pre-heated oven at 180°C until all the liquid is absorbed into the food, about 20-25 minutes.
