Ingredients

800 g peeled Prawnss from one of the Blue Island Fish Markets

400 g linguine

1 onion, grated

2 teaspoons fresh mint, finely chopped

1 small bunch parsley, finely chopped

3 cloves garlic, grated

40 g olive oil

200 g pulped tomatoes

Salt
-
Pepper
-
Sweet pepper

Hot chilli powder
Instructions
Boil the pasta until cooked al dente in plenty of salted water, drain and add a little olive oil to stop them sticking together. Cover and remove from the heat.
Heat a little olive oil in a deep frying pan, add the onion and garlic and gently fry. Add the prawns, parsley, tomato, sweet pepper, fresh mint, chilli powder and season to taste with salt and pepper.
Let the sauce thicken for about 5-6 minutes taking care not to overcook the sauce because the prawns will go hard. Put the pasta into the frying pan and stir together with the prawns.
Sprinkle with the freshly chopped parsley.
