Ingredients

1 kg Bogue from one of the Blue Island Fish Markets

1 vegetable stock cube

1 small bunch parsley, finely chopped

2 large or 3 medium size ripe tomatoes, peeled and finely chopped

1 horn pepper (not spicy), cut into rings

2 cloves garlic

1 teaspoon sugar

1/2 cup olive oil

Salt

Freshly ground pepper
Instructions
Purchase the cleaned fish from one of the Blue Island Fish Markets.
Wash and salt the Bogue and let them drain for about 15 minutes in a colander, until they absorb the salt.
Heat the olive oil in a large frying pan and add the tomato, vegetable stock, salt and pepper, garlic, sugar and stir gently.
Lower the heat, cover the pan and let the sauce simmer for about 15 minutes.
Add the fish to the frying pan, cover them with the sauce and leave to cook for another 15 minutes on a low heat with the pan covered.
Sprinkle the braised Bogue in the pan with the parsley and serve with freshly ground pepper.
