1kg Anchovies from one of the Blue Island Fish Markets

150gr flour

100gr Fine semolina

2 Salt

1/2 Pepper

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

Oregano
-
Thyme
-
Olive oil
Instructions
Rinse the anchovies thoroughly in water. Then strain them and set aside.
In a bowl, mix the flour, semolina, salt, pepper, cumin, garlic, oregano, thyme and paprika. Add the fish in small quantities, so that they are well coated.
Put plenty of olive oil in a deep frying pan and heat it over medium to high heat taking care not to let it burn. Fry the fish until golden brown. Remove from the pan with a slotted spoon and serve on a platter covered with absorbent paper.
Tip: Be very careful about the temperature of the oil and the cooking time because they are very small fish and can burn quickly and easily.
